Infused Herb Garlic Butter

April 19th is National Garlic Day—a day to celebrate our second favorite herb. In addition to being an essential flavoring integral to cultures and cuisines across the globe, garlic is thought to have powerful health benefits. According to the Cleveland Clinic, it’s an immune booster, helps to reduce inflammation, has benefits for your cardiovascular health, contains antioxidants and has antibacterial properties that can clear your skin and more!   

In honor of this magical, aromatic allium, we challenged our good friends, Alex and Kevin, our culinary cannabis scientists, to come up with the ultimate cannabis-infused herb butter recipe. The fumé team enjoyed it as the main ingredient for infused herb garlic bread but it would be delicious on your favorite steak or as a zesty baked potato or popcorn topping.

“The fresh herbs together with the garlic will make your mouth water and your kitchen smell amazing. The horseradish brings some heat and fans can add more for an extra kick. Freshly grated horseradish works well too. I am a firm believer that nothing goes wrong when combining garlic and herbs, so play around with whatever you have available, e.g. chives, basil. ” – Alex

“This versatile seasoned butter is perfect for garlic bread or to finish a steak. The options are limitless, really. The brightness of the lemon zest mixed with the garlic, horseradish, and fresh herbs provides a nice complexity to any dish it is added to.” – Kevin

Equipment:

  • Sharp knife
  • Small bowl
  • Medium-sized bowl
  • Zester or grater
  • Hand mixer or food processor (a fork or spatula will also work)
  • Parchment paper
  • Spatula

Ingredients:

  • 1 stick unsalted butter, room temperature
  • 2 TBSP canna-infused butter (approx. 90mg THC total)
  • 1 TSP prepared horseradish
  • 1 TBSP garlic, microplaned into a paste or finely diced (approx. 3 medium cloves)
  • 2 TSP fresh rosemary (or 2/3 TSP dried)
  • 2 TSP fresh thyme (or 2/3 TSP dried)
  • ¼ TSP ground black pepper
  • ½ TSP salt (to taste)
  • Zest of 1 lemon
  • French baguette or a loaf of your favorite variety for a loaf of delicious garlic bread.

Makes: This recipe will yield 12 TBSP garlic herb butter, 7mg THC per 1 TBSP serving. 

Directions:

  • Finely chop the fresh rosemary and thyme, set aside in a small bowl.

We prefer fresh herbs but if you’re using dried herbs, keep in mind that you’ll need ⅓ as much. If you’re using fresh herbs, be sure to dry them fully with a paper towel after rinsing them.

  • Add lemon zest and salt and mix well.
  • In a medium bowl, mix together room temperature butter, cannabutter, and grated horseradish and combine well using a fork, hand mixer or food processor.
  • Add in herb mixture and mix until fully and evenly combined.
  • Place on parchment and roll into a log, twisting both ends for convenient storage.
  • Chill in the fridge for 3 hours.
  • When ready to use, let come to room temp and spread on a french baguette or your favorite bread and toast in the oven at 350° for 8-10 minutes. If you use all the infused garlic butter and slice the toasted bread into 12 pieces, each slice should contain about 1 TBSP of the butter and approximately 7mg of THC.
  • Nom nom nom. Enjoy!
