Strawberry Rhubarb Margarita

It’s Cinco de Mayo, which history buffs know is a day of national pride in Mexico celebrating their victory over the French at the Battle of Puebla on May 5, 1862, but which for most of us is a celebration of tacos, tequila and other delicious gifts from our beloved brothers and sisters south of the border. 

As it turns out, our imaginative fumé culinary alchemists are also gifted mixologists. They’ve come up with this refreshing twist on your favorite cocktail—the strawberry margarita—infusing it with rhubarb and a dash of everyone’s favorite herb in the form of a cannabis tincture. Up your quarantini game with this delicious cocktail and impress your friends at your Cinco de Mayo Zoom fiesta. Did someone say olé?! Oh yay!

  • Zester or grater
  • Knife
  • Saucepan
  • Sieve or strainer
  • Blender or food processor
  • Cocktail glasses
  • Jigger
  • Small mason jar with lid for storing simple syrup


Simple Syrup:

  • 1 ½ – 2 CUPS rhubarb, sliced into 1/2″ crescents (approximately 2 medium stalks)
  • ½ CUP agave syrup
  • ½ CUP water


  • 2 CUPS strawberries (either fresh or frozen will work)
  • ¼ CUP fresh lime juice
  • Zest of 1 lime
  • ¼ CUP + 2 TBSP rhubarb agave simple syrup
  • 3 OUNCES tequila (2 jiggers)
  • 1 ½ OUNCES triple sec or Grand Marnier (1 jigger), or orange zest (totally fine to leave this out if you don’t have or don’t like)
  • 30 DROPS canna tincture 
  • Ice

Pro Tip: We recommend you start with 30 drops and increase to suit your intensity preferences. Remember, you can always add more but you can’t add less!

Makes: Two 8oz cocktails with 5.25 mg THC each or three 5oz cocktails at 3.5 mg THC each. Assume .35 mg per 1 drop tincture or 10.5 mg per 30 drops


Step 1: Make the simple syrup

  • Combine ingredients in a saucepan, the rhubarb may stick out above the water/sugar solution but will cook down quickly. 
  • Simmer over low heat for approximately 8 minutes, stirring occasionally.
  • Remove from heat, let steep for 10 to 15 minutes.
  • Strain contents through a fine-mesh sieve or cheesecloth into a mason jar. You will have more than what’s needed for this recipe.

Pro Tip: Save for topping on yogurt or ice cream, it’s delicious.

Step 2: Mix your cocktails

  • Combine all ingredients in a food processor or blender and pulse to achieve your preferred texture.
  • Pour over ice and serve.
  • Alternatively, you can add ice to your blender if you prefer a frozen strawberry rhubarb margarita.
